Over the years I have had smoked kielbasa, bologna, hotdogs, etc. made from venison and my brother and brother-in-law make their own sausage and bologna and I've never heard of making any of these with 100% venison? The percentage of pork fat added may vary but never straight venison? Sometimes we grind bacon ends in with the burger also.
