Careful Stalking of Grouse

Hi all,
This may be a long post to get to the question...but here goes.

My ES just turned three. Very biddable Ryman setter. I want to improve her grouse hunting skills. I have shot grouse over her, but want her to be VERY careful, the instant she hits a trace of scent...wind or ground. Often grouse hear us coming and start to walk out...when she gets the scent, she gets more excited and sometimes causes the flush while trying to locate in an effort to get stronger scent cone that will stop her solid.
If she happens upon a bird that has been sitting and kind of catches it by surprise, no problem....scent cone is strong, she is steady as a rock...I flush and shoot.
It's those nervous walking birds!!! I have seen dogs stalk them like a cat, carefully approaching without flushing.
Can this be taught in a controlled environment?
any strategies, success processes appreciated!

I also had a bumble footed Gordon setter...but you're in the hound dog section

The only thing you'll get here is sympathy and probably not much of that
