Loggy, can you post your dads soup recipe? I,ve had good luck with hunks of groundhog meat.
Just picked Mom's brain & this is whut she remembers...give or take a lil of course.

2-3 lbs turtle meat
1 cup onion, chopped
1 bay leaf
1 choped green pepper
4 tbsp flour
1/2 stick butter
4 hard boiled eggs, finely chopped
2 tbsp veg oil for browning meat
2 stalks celery choped
1 sprig thyme
1 small can tomato paste
2 qt hot water
1 cup dry sherry
1/2 cup Worcestershire sauce
4 tablespoons fresh lemon juice
Salt & pepper to taste
Cut turtle meat into pieces. Fry in shortening till litely brown. Add onion, celery, bay leaf, thyme, green pepper, tomato paste, lemon juice, sherry, Worcestershire sauce, butter, salt, pepper, and flour. Stir well. Add water and simmer for 1 to 1 1/2 hours. Diced potatoes & white corn can also be added to your liking to get some more veggies in.
Makes about 8-10 servings. If make a larger amount just increase the above proportionately.
