Re: How do you cook wood duck?
I stuff the breast with jalapeno's and cream cheese and wrap them in thin cut bacon. I pan fry them with bacon drippings until the bacon is crispy. I sometimes sandwich the stuffing between smaller duck breasts and wrap 2 together.
Purists will say they need smoked or roasted and eaten whole. I like my molars and skin everything, inspecting for shot.
