How do you cook wood duck?

So i want to cook my first wood duck. How do you do it?

I cut into thin strips and season with garlic and pepper...then I cut stips of peppers and onions. Wrap breast strip/onion/pepper with a 1/2 slice of bacon and secure with toothpick. Marinate with Hoisen sauce, BBQ sauce or whatever you like and BBQ on gril till bacn is done. Dont over cook. Yum yum gimme sum. Even my kids eat the heck out of it....

I slice a apple and a few slices of onion up then I lay some of both in a corning ware pan, place the duck breast on top of them, put some poultry seasoning on them cover with more apple and onion put into the oven at 325 degs for about a hour if there are any leftovers the next day I slice the duck breast up and make a sandwich with miracle whip and pepper it taste great!

I cut the duck breast into smaller pieces and let it marinate in olive oil,garlic,salt,and pepper for 2 hours then wrap it with bacon and cook it. Everyone I cooked it for has liked it so far too.

Just made some tonight, pounded it out thin, rolled it up with some Jalapeno and onion inside, wrapped in bacon(sportsman's secret ingredient) and broiled until the bacon was crispy. The pic doesn't do a good job of showing how pink it was, be careful not to over cook it.

if ur in a hurry, just marinate a breast in italian dressing and again do not overcook. grill it to medium at best. the only way to mess a woodie up is to overcook it. enjoy

I stuff the breast with jalapeno's and cream cheese and wrap them in thin cut bacon. I pan fry them with bacon drippings until the bacon is crispy. I sometimes sandwich the stuffing between smaller duck breasts and wrap 2 together.

Purists will say they need smoked or roasted and eaten whole. I like my molars and skin everything, inspecting for shot.

I just cooked some last night. I soaked them all day in the fridge in milk. Wrapped a strip of bacon around each breast fillet and secured with toothpicks. Put them on the grill for 3 minutes on each side till the bacon was done. Duck breast was a perfect medium-medium rare and tasted just like a fine filet mignon. Spectacular!

Great with mallard...I have had merganzer this way and it was good too Wrapping in bacon is akin to deep frying...everyting tastes good, cept maybe coot.
