1 (#2) can beets
1 cup vinegar
1/2 cup sugar
1 tsp salt
3 cloves
Drain and keep juice from beets. Add enough water to juice to equal 1 cup. Pour mixture into medium saucepan. Add the vinegar, sugar, salt and cloves. Bring to a boil. Pour hot liquid over beets. Let stand at least 24 hours.
-Red Beet Eggs-
Once liquid has cooled from red beets, add 1/2 dozen peeled, hard-cooked eggs. Let soak for at least 12 hours.
