5 lbs potatoes, peeled and cut into pieces
6 slices white bread, cut into cubes
1 large onion
Salt & pepper to taste
1 - 2 cups milk
1 stick and 1 Tbsp of butter
1 beaten egg
1/4 tsp sugar
Boil potatoes in large pot of water until soft
While potatoes cook, melt 1/2 stick of butter in skillet. Saute onions until they are soft, but not too brown. Set aside.
Add more butter to pan. Saute the bread cubes until they are soaked in butter and slightly brown. Set aside.
When potatoes are done, mash them well. Heat milk in the microwave or a saucepan and add to the potatoes, mixing in gradually until potatoes are creamy. Stir in 2 Tbsp melted butter.
Add onions, bread cubes, salt & pepper, and sugar. Mix thoroughly. Add egg, mix thoroughly.
Add more milk if needed. Potato filling should be creamy, not thick and dry. Serve warm (put in casserole and bake in 350 degree over for 10 - 15 minutes if needed to reheat).
