John's Duck & Potatoes

I read your recipe on duck. I'm sorry you only like this one. It sounds good and I'll try it, but here is another you may want to try. I, like you, have found duck to be very tricky in cooking. My family is very picky when it comes to wild game in general, but they all love this one, in fact my duck supply has dwindled due to this receipe.


4 duck breasts (de-boned is best)

bacon (uncooked)

1 large onion

8 large potatoes

1 tablespoon poultry seasoning

1/2 teaspoon salt

1 cup sharp cheddar cheese (shredded)

Chop up the onion and put it in a pan with the duck, poultry seasoning, and enough water to cover it all. Put them on low heat and simmer for 2 - 2 1/2 hours. In the meantime, cut up the potatoes and prepare to make mashed pototoes.

When the pototoes are done, drain the water and add the salt, cheese, and 3/4 cup of the duck broth. Mash this all together and spread out in a small cake pan (or other pan of your choice). Now, wrap the duck in bacon and place on top the mashed pototoes, put this in the broiler and broil until it is brown. This is a very good meal and is simple to make. Iif you like meat and pototoes, you'll like this one.
